Our oldest daughter was reading about Early American History recently for homeschool and came across the fact that cheese was made with rennet, which is an enzyme extracted from the inner lining of the fourth stomach of calves. Curiously, she wanted to know if that method is still used today and we found something very interesting in a letter from Kraft General Foods, at http://www.natural-connection.com/resource/tnc_reference_library/cheese.html). “Since the consumption of calves for veal has not kept pace with the demand for rennet in the preparation of cheese, a distinct shortage of this enzyme has developed. Consequently, a few years ago it became a common practice to mix the rennet extract from calves' stomachs with a pepsin enzyme derived primarily from the stomachs of swine.”

And yes you read correctly. Cheese is not only something to simply give up for a strict Vegetarian diet, but is now also an unclean food item.

Interestingly, Ellen White wrote "Cheese should never be introduced into the stomach." {Counsels on Diet and Foods, page 368}

But do not quickly turn to soy and tofu products. The process to make some of those products also uses pepsin. It is identified as modified soy protein. Yes, you heard that correctly. In the making of many Vegetarian products, modified soy proteins are used. This is actually a swine by-product.

Below are links and quotes from reputable sources for you to do your own research. They include familiar encyclopedias and even Webster dictionary. If you do not have time to verify or further study this out just yet, the right thing to do is to halt the intake of cheese and modify soy protein until further investigation.

Keep in mind, if one puts this study off because of what they are afraid to find out Jesus says it is a sin, so serious that heaven would be lost. "And this is the condemnation, that light is come into the world, and men loved darkness rather than light, because their deeds were evil" (John 3:19).

Ellen White wrote these things without us knowing fully why and in many cases, we have excused it.

    "Butter is less harmful when eaten on cold bread than when used in cooking; but, as a rule, it is better to dispense with it altogether. Cheese is still more objectionable; it is wholly unfit for food." {CD 368.5}

    "Many a mother sets a table that is a snare to her family. Flesh meats, butter, cheese, rich pastry, spiced foods, and condiments are freely partaken of by both old and young. These things do their work in deranging the stomach, exciting the nerves, and enfeebling the intellect. The blood-making organs cannot convert such things into good blood. The grease cooked in the food renders it difficult of digestion. The effect of cheese is deleterious." {CD 368.6}

By the way, there has been some, including the compilers, that state that not all cheese was condemned, permitting the popular ones to still be used. But if you look at the description of grease being an issue associated with cheese and the other items listed, all you have to do is order a pizza and know that she meant all cheeses. A pizza maker takes dough, spreads some sauce around, throws some cheese on it, and puts it in the oven, yet it comes out dripping with grease. Take a slice and fold it in half once and tilt it backwards. You could easily capture a tablespoon or more of grease per slice!

And Ellen White also wrote:

    "Let the diet reform be progressive. Let the people be taught how to prepare food without the use of milk or butter. Tell them that the time will soon come when there will be no safety in using eggs, milk, cream, or butter, because disease in animals is increasing in proportion to the increase of wickedness among men. The time is near when, because of the iniquity of the fallen race, the whole animal creation will groan under the diseases that curse our earth." {CD 349.1}

This was written in 1902. The process of learning how to do without eggs, milk (main ingredient for making cheese), and butter was already underway. That means she expected total cessation of these items was to happen very quickly, even in her lifetime. Do you think 108 years later we would finally be passed the time to have ceased using those items? Yes! Besides, she tells us when they should be wholly given up:

    "God will give His people ability and tact to prepare wholesome food without these things. Let our people discard all unwholesome recipes." {CD 349.2}

Do you think we have the ability today and the tact to do without those foods? By all means we do. You may not like them, but what was Jesus willing to do for you? Does your appetite control you?

Again, we are beyond discussing what healthful living is and beyond going Vegetarian or not. God has many ways to get people to cease from doing what He does not want His people to do. If you have yet to listen to the prophet and let cheese alone, now He has used unconverted people of the world to make it a purely unclean food product by using pepsin.

And never mind that the organized body is not pronouncing this finding loudly. That is not their agenda. Their agenda is not to offend so as to build up numbers. If you stopped eating bacon, sausage, and pork chops as well as shrimp, crabs, and lobster, then that is good enough for you they say. And even then there are times that one is permitted by the organized church to eat those items. Ever hear the excuse of what is placed before you? That is absolutely wrong!

Brother, sister, the organization is not going to save you. Even our ministry is not going to save you. You can only choose to be saved.

Webster (www.webster.com) states:

    Rennet is "the contents of the stomach of an unweaned animal and especially a calf. The lining membrane of a stomach or one of its compartments (as the fourth of a ruminant) used for curdling milk (the process of making cheese)."

    Pepsin is "a preparation containing pepsin that is obtained from the stomach especially of the hog and is used especially as a digestive aid."

Answer.Com (www.answers.com/topic/pepsin), a site that collects from multiple sources, states:

    Sci-Tech Encyclopedia: "Pepsin is prepared commercially from the glandular layer of fresh hog stomachs. It is a part of the crude preparation known as rennet, which is used to curdle milk in preparation for cheese manufacture. Pepsin is also used for a variety of other applications in food manufacturing; to modify soy protein and gelatin, thereby providing whipping qualities; to modify vegetable proteins for use in nondairy snack items; to make precooked cereals into instant hot cereals; and to prepare animal and vegetable protein hydrolysates for use in flavoring foods and beverages."

    Columbia Encyclopedia: "Pepsin and other proteolytic enzymes are used in the laboratory analysis of various proteins; pepsin is also used in the preparation of cheese and other protein-containing foods."

May God help us all to find healthy, acceptable food to eat in this day and age.
